Each dish is beautifully crafted and combines spot-on technique with insightful pairings and an overriding goal to showcase generous flavours. Asian influences are a familiar feature of the menu and work wonderfully with the region’s cornucopia of ingredients, illustrated by a tataki of wild boar lacquered with a teriyaki sauce and veal kidneys in mustard sauce with piping hot fresh fries.
